Journal - First food freedom breakfast
I've been getting tired of hard boiled eggs and vegetables for breakfast. So I've been looking up paleo waffles to make for Sunday.

I found this recipe by The Real Foods Dietitians, and it's delicious! The only substitute I made was to use coconut milk instead of almond milk because that was the best choice at Foodland. Here's the link to the waffles:
Because I have a small waffle maker, I ended up with 19 waffles, rather than the 8 servings suggested in the recipe. Eek. I think I may have to consider investing in a large waffle iron. I popped these in the freezer after cooling them on a wire rack, and I'll just toast them straight from the freezer when I want. I didn't feel the need to add any syrup as the recipe has syrup in it, so it was more than sweet enough for me.
I also reintroduced coffee because I tried drinking it with coconut milk and no sweetener, and I just couldn't; it's still too bitter. I finally took the plunge and ordered some Vital Proteins Collagen Creamer in the vanilla flavor, so I brewed up some medium roast coffee, added half a packet of Truvia, and one scoop of the creamer. It was pretty good, and it didn't trigger any cravings. And my trusty hard boiled egg with some Everything but the Bagel seasoning from Trader Joe's. Yum. A great way to turn around some food boredom with that seasoning!
